I love adding berries to basically everything atm. These muffins are super gooey, juicy and every berry you encounter is a little fruity highlight 🙂
I added peanut flour which is nothing else than defatted powdered peanuts. It is very high in protein (50g) and adds this nice peanut flavor to your bakings, smoothie bowls, yoghurt etc. I really like working with peanut flour!
Recipe
makes ∼ 7 muffins
Ingredients
160 g wholegrain flour ( I used wholegrain spelt but I guess buckwheat would work too)
20 g peanut flour (I use the one by KoRo.Drogerie *)
30 coconut blossom sugar
30 g grated coconut
80 g coconut cream (don’t shake the can and put it into the fridge for a few hours. make sure to use the creamy/firm part on the top of the can without the coconut water)
50 ml plantbased milk
1 tsp baking powder
80 g apple sauce
120 g frozen mixed berries
some coconut oil for the muffin tin (optional)
Instructions
- Mix all ingredients except for the berries and knead into a dough
- add in the berries
- pour the dough into the greased muffin tin
- bake at 180º for around 35 minutes
Tip: I mixed some more peanut flour with apple sauce till I had a creamy consistency and put it on top of the berry dough (before baking). The result were layered low fat berry-peanut muffins. So good!!!
