Carrot Cake Oats

[contains ad/werbung] Carrot oats are such a classic meanwhile. Still I felt like sharing my version of it as I absolutely fell in love with the idea of adding apple sauce as a “secret” ingredient ❤

This breakfast is prepared in only a few minutes and keeps you full for a long time. The carrot and the psyllium husks add some extra fibre. Moreover they contribute to a perfectly sticky consistency and I just love sticky oats 🙂

Here we go with the simple recipe:

Recipe

serves 1

Ingredients:

1 carrot, finely grated

80 g glutenfree oats (I use them by KoRo.Drogerie*)

2 tbsp apple sauce (sugarfree)

1/2 ripe banana, mashed

1-2 tsp xylitol

1 tsp cinnamon (by KoRo*)

1 tsp psyllium husks (by Koro*)

oat milk /water

Toppings:

vegan chocolate

fresh fruit (I had strawberries and frozen wild blueberries)

apple sauce

 

Instructions:

  1. bring to boil oats and your favorite plantmilk (I used oat milk and added some water)
  2. add all remaining ingredients and cook on low heat for a few minutes till your oats and carrots are soft and you get this typical porridge consistency.
  3. Top with apple sauce and your favorite fruit, chocolate, nut butter or whatever comes to your mind.
  4. Enjoy!
